Born in New Jersey, Wendy Razo lived around the world before settling in northern Arizona in 1982. Three decades later, after raising her seven daughters, one son, and two beloved dogs in Flagstaff and Cottonwood before moving to Prescott, she launched Jersey Girl Cheesecakes in 2022.
The idea for Jersey Girl Cheesecakes blossomed in 2019, as Wendy and her daughters began trying different cheesecake recipes. It wasn’t until the summer of 2022 that their passion transformed into a thriving business. Starting at weekend markets while Wendy managed her full-time teaching job, the business gained momentum, culminating in the purchase of a food truck in 2023.
Now, Jersey Girl Cheesecakes can be found at the Prescott Farmers Market every Saturday, as well as at various private events, including weddings and birthday parties.
The company’s name reflects Wendy’s connection to her New Jersey roots, while the food truck itself embodies the shore vibe she cherishes from her visits to the beach town Belmar, New Jersey. This theme resonates throughout the truck’s design and the engaging atmosphere created for customers, ensuring they feel valued and appreciated during their brief visits.
The menu features an array of cheesecake creations, served in innovative ways such as jars, mini cups, push pops, and even sandwiches made with cookies. Dubbed “cheesecake with attitude,” the menu also includes waffles and cream sodas, delighting customers with fun, portable desserts.
Exciting developments are on the horizon, with plans to expand into locally owned stores by the end of 2024, increasing accessibility for cheesecake lovers across Arizona. The goal for 2025 includes a greater presence at farmers markets and even shipping Jersey Girl’s delightful treats nationwide in time for the holiday season.

In addition to her newest venture, Wendy has spent the past 12 years dedicating her career to the behavioral health field, supporting individuals and families in their journeys toward peace and personal growth. She is also a first- and second-grade teacher in Paulden.
