Spring is in the air and celebrating is meant to share at Rafter Eleven!

For Easter, we are sharing one of our all-time favorites: rack of lamb. All you need is a bottle of Wild Rosemary Olive Oil complemented by our Fig and Sicilian Lemon balsamic vinegar and a smoked black pepper.

Recipe

Easter Celebration Lamb:

With this recipe, rack of lamb becomes an elegant centerpiece for your Easter Celebration.

First, make the rub. Mince in a food processor 2 teaspoons of a kosher sea salt, 6 cloves of fresh minced garlic, and 1 teaspoon of smoked black pepper. Rub this mixture all over the lamb.

Next, make the marinade. Combine ½ cup Wild Rosemary Olive Oil, ¼ cup Espresso Balsamic Vinegar and 2 tablespoons Fig Balsamic Vinegar and marinate the lamb for 2-6 hours in the refrigerator.

Preheat the oven to 450 degrees.

Roast the lamb for 15 minutes for very rare.
